I sure would like to know how to cook plantanos fritos, the ripe soft ones, not the deep fried tostones. Necesito ayuda en la cosina!!

Order the book La Cocina Dominicana from Barnes and Noble, I believe you can get it in english, I have a spanish version.

There are many great recipies including simple ones like platanos maduo, or more complex ones like pastalietos.
