quotes in threads

I've looked for the answer to this and can't find it. Not really a newbie, but a newbie question. How can I quote JUST PART of a post in my reply? I've tried several times and it invariably includes the entire contents of the post I'm trying to quote.

I USED to be able to do it, long time ago. Feeling pretty stupid right now. BTW... I use Macs if that makes any difference.

Just highlight what you DON'T want included, and click 'delete' on a Mac. Obviously, you do this after you click "reply with quote"

the thing is, I just assumed it would be a one step process, or an option to select; rather than choosing the whole thing then adjusting it. but hey... I'm cool with whatever works.
