We have decided our next attempt will be at making canoas, which are ripe platanos fried and filled with beef picadillo. Another fairly easy and delicious treat. I assume that Dominicans make canoas, though I get them from the Puerto Rican restaurant. From what I hear, Puerto Rico and the DR have always had a very close relationship and are culturally very similar. Though they are somewhat different because I know the beans and rice from each country are different.

we didn't do canoas yet. but did some stuff on yautia. It seems yautia is called taro root in English. It is very popular in Hawaii where they make their famous poi from it. It is also said that taro root is poisonous until it is boiled. hmmm.
We tried a recipe by a Puerto Rican who adapted a potato, since yautia is very potato-like, and leek soup recipe:

peel the yautia and cut into cubes (I guess I'm hung up on cubes)
cut up some onion

boil them together for 1/2 an hour in some chicken broth or sopitos. Drain. Put them through a food processor for a moment to mix it up more. Can be eaten cold or hot.

We drained it but then added more chicken broth and ate it as hot soup.
