Given that Granola is not readily available in the DR, here is a recipe I used to make for a summer camp:
Large Cylinder Old Fashioned Oatmeal(not quick or instant) 32oz?
4 oz Margarine(not butter if stored for more than a week)
1 tsp salt
Bag of sweetened shredded coconut (12oz?)
Box of Grapenuts
24 oz raisins
jar of wheat germ(optional)
8-12oz Honey
In a large baking pan, toast the oats in a medium heat oven with the margarine and salt stirring every few minutes to avoid burning. Pay close attention to the corners. When the oats start to turn slightly brown they will give off a nutty smell. Top with the coconut and bake until the coconut starts to brown for about three more minutes.
Remove and put into a very large bowl. Add other ingredients and honey while still warm. It will be sticky at first then less so the next day as the oats absorb the honey. Makes about one gallon or five pounds. Store in an airtight container.
Granola bars:
Base:
3/4 cup Old fashioned Oatmeal
3/4 cup Brown Sugar
3/4 cup Flour
1/2 cup buttter
Mix thoroughly. Press into 9"x13" pan and bake for about 10-15 minutes until just brown on medium heat.
Mix two cups granola with one egg. Spread evenly over base and bake for another 10-15 on medium low heat. Let cool thoroughly before cutting.
alternate shortbread base:
1 1/2 cups flour
1 1/2 cups powdered sugar
3/4 cups butter softened.
Avoid over mixing
