A couple of hundred years ago some very brave men wrote the Declaration of Independence. A majority of them lost everything for doing that. Life. property, and families. It was a dirty war.

In the end a "new nation, conceived in liberty and dedicated to the proposition that all men are created equal"..was born.

A friend of mine is celebrating the 4th with a whole roasted pig roast. He's doing the cinder-block method like the Three Guys From Miami do it:

Mac and Cheese is something I always make for the 4th. It was introduced to the US by Thomas Jefferson:

1 pound Elbow Macaroni

?C butter
?C flour
?t Granulated Garlic
1t Salt
1 t Dry Mustard (optional)
4C Whole milk (DO NOT SUB 2% or skim)
12-16oz Shredded Jack, Cheddar, Colby or other suitable cheese.

Mix separately and set aside:
3/4C Plain Bread Crumbs
2T Melted Butter

Cook Macaroni in 3qt or larger pot to al dente. Drain well.

Heat butter until just melted in a large saucepan. Remove from heat and stir in flour until smooth. Add milk and return to medium heat until it thickens, but do not boil, whisking as needed. It will be lumpy at first. Remove from heat and add in about ? cheese. Stir until cheese is mostly melted. Transfer to pasta pot while pasta is draining.

Stir in pasta, then the rest of the cheese. Transfer to 9"x13"x2" casserole pan. Top with breadcrumbs mixed with melted butter and make a smiley face using Paprika. Bake at 350 until it starts to brown, about 20 minutes. Let rest for 15-20 minutes before serving if possible. Serve with Frank's RedHot, Tabasco or other hot sauce.

Note: using low fat milk may cause the sauce to ?break? or curdle.
