By the time you know,Thanksgiving,Christmas and New Years will be here.Would
anyone be interested in sharing your favorite holiday recipes?You can post as many
as you like.Tell us a liitle bit about the recipe;is it a family favorite,do you get rave
reviews? etc. For those who live in the DR,maybe you can suggest substitutions for
certain ingredients.

For starters,I entered this recipe in a holiday contest at work and won first prize in
the appetizer category.I t doesn't matter how many ingredients are in a recipe,it's
the taste that counts.

MEATBALLS IN CRANBERRY WINE SAUCE

one package of frozen meatballs(any size) or you can make your own.Cook them
first.
one (16 oz) can wholeberry cranberry sauce

one cup firmly-packed light brown sugar

one cup dry red wine(I use pinot noir) but any red wine will do

2 teaspoons hot chinese mustard (or any hot mustard)

In a medium-size causepan over medium heat,add cranberry sauce,brown sugar
red wine and hot mustard;stir to combine.Let simmer for 5 minutes,stirring often.
Add frozen meatballs and continue to cook until heated through.

A bit surprised about the hot mustard in the cranberries, but will give it a try...

Easy, tastefull appetizer as well...

Smoked salmon roll with herb cheese...

- 200 gram package of smoked salmon. Try to get a brand with nice big slices...
- philadelphia cheese with herbs
- small can of crema de leche
- a bit of horseradish sauce

Put a sheet of clingfilm on your counter or board.
Spread out the slices of salmon on the clingfilm, so they overlap, and you will be able to make a roll of them.
Make a mixture of the philadelphia, crema de leche and the horseradisch sauce (as spicy as you want it...), and add a pinch of pepper.
Spread mixture over half of the salmon, lengthwise.
Make thight roll of the salmon and cheese, using the clingfilm.
make knots in end of film
throw in freezer of coldest part of fridge...

When you need it, take it out, and slice it in 1cm slices...

Quick, easy, to be made up front, and delicious...

This is an awesome thread! I'll think of some, but for now I'm going to be selfish and take all the recipes I can get. The only problem I have is I am unable to bake in my place. I miss making baked spicy squash casserole. The apartment I live in just has a stove top.

For the holidays, or any party that is, I like to be able to prepare a lot of it up front, or make it that easy that I do not really have to watch it.... As I do not want to be in the kitchen, but with my friends or family.

Here is a dead easy one, and always a raging success.

Buy a camembert cheese (I normally buy the ST. Michel brand here in the wooden box, not the highest quality to eat just like that, but for this recipe it does not matter.
Get aluminumfoil to wrap the cheese.
For the less intelligent amongst us, take the cheese out of the wooden box, and out of the waxpaper... lol
Put it on the foil, make a hole in the top of the cheese, and pour some sweeter red wine, or, if you have it, port into the hole.
Put some sprigs of time on top of the cheese
Wrap it into the foil
Slam it into an oven of 350 degrees
Cut some nice bread into bitesize chunks...

Drink the rest of the wine or port whilst waiting...

When cheese is hot, take out of oven, and dip fresh bread into it...

You can also forget the oven, and throw the cheese in foil on the barbie...

POLISH PIEROGI

now, there are many different versions of the dough and many possible fillings. i am putting here the most basic dough that comes out nice and soft when cooked. the filling is with mushrooms, simplified. in PL we normally use dry hongos but it is not viable in the west because of the price. even damn 'shrooms are very expensive here in DR...

for the filling:
mushroom
onion
garlic

crush garlic, chop mushrooms and onion in small pieces. in a big pan warm a spoon of oil, throw in all the ingredients. fry until nice, brown and soft but dry (mushrooms lose lots of water when cooked). when ready add salt and pepper.

put on fir big pot 2/3 full of water with half a teaspoon of salt. piergogi need room when cooking.

for the dough:
flour
olive oil
hot water

i never measure anything but the proportions are roughly 1 cup of water to every 3 cups of flour. you will have to adjust it a bit while kneading. water needs to be hot. not boiling, of course. just hot and comfortable enough to work the dough with your hands. a pound of flour will make enough pierogi for 2-3 people.
make a little mountain from flour, force the top down make a little hole, pour in about 2 spoons of olive oil, cover with flour. create another hole in the mound and pour the water. work the dough adjusting the ingredients a bit. it has to for a soft ball. place dough ball on floured surface, roll flat.

press drinking glass into the dough making small round "cakes". fill each of them with mushrooms, put away on the floured plate/tray caring not to make ready pierogi touch each other. especially important in DR, hot dough gets sticky. when all pierogi are ready put them slowly into boiling water. don't put too many at the time, they need a bit of room. piergi are ready when they swim to the surface. fish them out with a ladle and drain. you may sprinkle them with some olive oil so they do not stick together.

in PL we serve pierogi with skwarki: cut bacon, garlic and onion into small piece. fry in a bath of oil until golden. pour over pierogi.

fattening but delicious :)

Playero has it. And you now know the horseradish sauce... merretich at playero, on top of the freezers amongst the german stuff.

For this recipe you will need a candy thermometer(but it's easy to make) I f you don't
like pecans,just use any other kind of nuts.


CANDIED PECANS

2-3/4 cups pecan halves
2 tablespoon butter,softened(divided)
1 cup sugar
1/2 cup water
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1 teaspoon vanilla extract

Grease a large baking pan(cookie sheet) with 1 tablespoon butter;set aside

In a large saucepan add sugar,water,salt the remaining 1 tablespoon butter
and cinnamon.Cook and stir over low heat until sugar is dissolved.Cook and
stir over medium heat until mixture comes to a boil.Cook,without stirring
until a candy thermometer reads 236(soft-ball stage).

Remove from the heat;add vanilla.Stir in nuts until evenly coated.Spread onto
prepared baking pan.Bake at 250 degrees for 30 minutes,stirring every 10
minutes.Spread on a waxed paper-lined baking sheet to cool.Yield:about 1 lb.

I make these around Christmas and give to family and friends as gifts.Put them
in pretty little decorative jars or plastic treat bags,tie with red and green ribbons.

People you know in the DR will love this.Nuts are expensive and not alot of them
can afford to buy them.Nice gift for co-workers or school teachers.

Here is a favorite of mine

Breadpudding

4 cups of stale white or whatever bread you have
4 eggs
1 cup of milk
1 can carnation milk
1 cup of sugar
1 tbl spoon of vanilla plus cinn or allspice
1 handful of raisins

chop bread in small cubes ,soak with the egg and milk mix
add your cinnamon or allspice and raisins/nuts if you like
let stand for 20 min till the bread is all wet

add to your baking pan ,top with brown sugar

bake at 350 for 35 to 40 min

when its all done ,either slice the bread in squares or use an icecream scoop

pour hot vanilla sauce with or without bourbon over the slice
