Ginger in Dominican Dishes?

Something I often think about when I'm using fresh ginger, which is almost everyday...apart from teas and as an adjunct cure-all to Vicks VAY POO RO...in what dishes do Dominicans use ginger? It so widely available here and very inexpensive...but I never see (or taste) anyone using it...

Mostly Dominicans use it in baking,like coconut candy,cookies(galletitas de jenjibre) dulce de batata, when making pineapple preserves,some add ginger.

Thanks everyone for the responses. I mostly use it for ginger iced tea, stir fry, and marinades...I'm definitely going to try Aunt Clara's Shrimp recipe...looks awesome...

Anyone else have interesting recipes/uses for ginger?

BTW, chewing on a piece of ginger root is a great way to combat motion sickness...and ginger does have a lot of medicinal properties, especially for stomach/digestion issues...

I use it a lot in Thai and Indian cookery and also do a ginger barbecued pork by frying garlic ginger chilli and onions, add pork steaks or chops, a tin of tomatoes (or fresh ones plus a little water and tomato paste if no tins), a couple of tablespoons brown sugar, couple tablespoons Worcester sauce, bit of water if needed, lid on and simmer for an hour or until pork tender. Delicious with rice or potatoes.

What I do with ginger is puree it with canned Mandarin oranges and garlic, simmer it, then make a corn starch slurry as a sauce for chicken and chicken wings. Depending on the dish, I'll add some scallions for a garnish.

I have several versions of sancocho which called for minced or grated fresh ginger.

Interesting thread. Related to it- wonder why I've never seen ginger ale in the RD. I think it would sell.

i use ginger sometimes for stir fry and juices. but i have not seen it used in cooking much.

I use fresh ginger in a Filipino Escabeche de Pescado. It adds a bit of zing to the sauce for the fish.
