On Santo Domingo Invita a few weeks ago they had a feature on a place up in Jarabacoa and I think it is what you are looking for. I can't remember the exact name but it was Rancho something. It has a bunch of wooden casitas that you can rent. Also they cook and brew coffee in a setting from 100 years ago.

We stayed at Hotel Gran Jimenoa for 3 days, loved it. River runs right behind the rooms, beautiful.

We've used the Gran Jimenoa for years to rave reviews.

Also VERY nice is the Jarabacoa River Club. The GJ is full for Samana Santa, so we'll be using the River Club for an upcoming tour. Will report.

The river runs through the RC...

Hotel Gran Jimenoa is nice, but on the pricier side. I know of a few hostels that are less expensive if that matters.

Jarrabacoa River Club is great, right on the river. Need to book the other tours directly or through the front desk. They have a website.

Go to La Confluencia, where the rivers meet. The guys on the horses will almost knock each other over getting to your car to rent you a horse.

What about Hamaca de Dios? Isn't that up in those hills nearby? I still haven't made it up there yet.
Their hotel isn't done. Plus they just signed a dealio with a mega-ritzy boutique hotel/restaurant management company. They will run it.

The restaurant is fantastic! And expensive...
