Paella anyone?

Saw this article in the NY Times today, and it reminded me of some of the great paella I've had in DR.

My favorite used to be in the restaurant at the original Hotel Lina. Then there was a Spanish restaurant on the malecon that had great paella, I don't remember the name but if I heard it I'd know. Started [maybe] with a C????

So where have you had great paella in DR? Preferably on the south coast.

the last time i had paella there were things submerging themselves while i ate.....I havent tried it since

One time I had paella at a restaurant in NJ . It was seafood paella and I did not like it. It was made with fish stock and the smell of fish was too strong.(overpowering)

never had it...

It's just glorified chicken and rice. Seafood, chicken, pork, chorizo, and vegetables are added. Chicken, vegetable or fish stock and of course saffron. Paella is just the pan in which it is made. It is the chicken and rice dish of Spain.

I like paella without meat. Someone somewhere in Santo Domingo makes it to order, I've been to several homes where it was served, beautifully presented, with small lobsters arranged in a design. It comes right in the paella pan. I asked my SIL when she served it, and she said she had to return the pan, I presume she left a deposit for it.

We alternate Italian Christmas Eve with Dominican Christmas Eve in our home. Dominican is always roast pork, pastellitos, etc. There aren't enough of us to make the 7 Fishes for Italian Christmas Eve, so for a long time now I've made paella, with 7 fishes in it. Always popular. But much nicer to have someone else make it for me!

The best Paella that I ever ate was on the beach at the Carabela in Bavaro, when it was just a construction site.
I had a good friend who had been hired as GM and who was acting as a sort of general contractor.
He and his wife, their kids, some of the senior construction people and some other assorted guests......
The great huge pan over the bonfire/grill.
Fun to watch the preparation. The red wine was very good.
They were mostly Mallorquines and the paella was prepared in that fashion.
Very tasty......
The only thing that I don't love about paella are all the shrimp antennae that become separated from the torsos and
eventually find their way betweens one's teeth.......

Simple paella at home can be made with a base (sofrito) of onions, garlic, saffron, piment?n (cayenne/sweet paprika), tomatoes, red peppers, and peas.
Then you add the seafood and/or meat of choice, rice, and stock, as well as other ingredients like artichoke hearts. Salt and pepper to taste.
Garnish with chopped fresh parsley and lemon wedges.

It does look good..............minus the damn peas.
But all soupy like that and there would be no concon?
Bummer.

Throw in some sliced chorizo or chopped ham (sauteed) in the cooking process. Adds a depth of flavor. :)

It's good when it's asopao. Use short-grain rice, as for risotto.

You know me, bronzie, I only do veggie or seafood :)

I don't like peas that much either but they do go well with paella.
