Mondongo / Tripe

Can one buy bleached, pre-boiled, fully dressed mondongo in the RD or is it all green tripe? If you know, please let me know. Thanks..

If u live in the campo, and it is modongo de pollo u are after ( I use it for my dogs ), it is very cheap but not washed. Pay someone 100 pesos to do it for u, if u dont like doing in it.

If it is mondongo for human consumption, like pork or cow, la sirena, la national sells them already washed ( but I would wash them again to be on the safe side ). In santiago, for sure, cos we buy them from time to time.

Does anyone know if they fry tripe here? As a kid I loved the smell and taste of a good tripe sandwich. Mustard, onions, pickles, damnnn. You had to get it from someone who knew how to cook right, if not you got a chewy, stretchy thing.

Is "mondongo de pollo" the same as what's known as "g?siers" in French or "gizzards" in English? Just curious, none of it is really my cup of tea.

No " gesier" is what u buy with higlado de pollo here..... I think it is the "small" bag in the throat where they predigest the food. U can often see dominicans rubbing the bird's throat to check if it has eaten enough.
When u buy a chicken in the campo they clean it out for u, but then put back in the heart, the liver and the geysier. All 3 are great in a salad.

Mondogo is the intestines of the bird. Not really a delicacy. Poor man's food only. Or great cheap dog food. And u need to clean them out by pushing a stick through them, without piercing the tube. Then wash and wash and wash . Lots of work. Local chicken dealers will sell it to u for nothing. 50 pesos a big paint bucket full of innards.......smell included...

Not if they are fried right. mmm mmmm good!!! I have to find a place this has been on my mind for the last few days.

Am I the only one that feels a little weird when ordering one of these dished, mofongo, mondongo etc etc. I feel like I'm ordering a porn star or such like.
