Yesterday, I tried to find some corn on the cobs to put them in a boil but I couldn't find any yesterday. Luckily I found the frozen one in the Nacional but I wonder what's up with the lack of fresh corns in Santiago?

Funny you ask today. This morning we were in Bani buying more mango trees, and we passed three massive parked trucks that were overloaded with fresh corn on the cob. Surprised both of us. Not sure where it was going, but it was such a huge amount that it was probably gong to be processed somewhere.

Once in awhile we'll come across someone selling fresh corn, but it's uncommon. We have seen guys on the sides of the road selling boiled corn, but never have tried it.

P.S. If you do find corn on the cob in DR, don't expect it to taste like what we have back in the USA. It's very starchy and much tougher. Makes good majarete/corn pudding though.

My understanding is that sweet corn, like we are used to in the US and is a personal favorite of mine, does not grow well in the tropics because of the light and temperature conditions here. So sad. The corn grown here is good for pig feed. Sweet corn is one of the things you really can't get here. Where I grew up in NY it was amazing and it was not bad in California.

Also there is sometimes in the fridges in the national supermarket, in fridge for vegetables. Packets of 2 or 4, fresh. Nice, but I am no expert.

Supermercado Nacional on Juan Pablo Duarte in Santiago always has the Jolly Green Giant corn on the cob available (packs of 4).

There is always corn on the cob being boiled in front of the La Sirena on Calle del Sol in old center Santiago. I haven't tried it.

This is what I put in yesterday and it wasn't that bad but I really prefer fresh ones.
Its always good to have plan b. All I have to find is some cheaper fresh seafood source In Santiago.

There are two main kinds of corn: sweet corn, for corn on the cob, and dent corn, which is used for feed and the production of corn syrup. The vast majority of corn grown is the latter nowadays.

Yes, they always sell it there. You were close to our home, and at our favorite beach here, was the first Sunday in a long time that we weren't there ourselves. If you're still near here, send me a PM and stop by to say hello.

Hominy is made by soaking regular corn in a lye solution. It can then be made into grits or ground into Masa Harina.
