Hi Tom. Our well water is very dirty and salty so we use a Big Blue 10" with to pre-filter. Easier and cheaper to change that 1 then the other 1st and 2nd filters on the three RO units. Filter type will depend on what water you have.
Number of units depends on your needs and how you want to operate your systems. We are 95% solar so only run them during the day when needed, so about 8 hours a day. (I don't like to have "things" running at night anyway.) We have a large place with several people and large animals living on property so we figured how much water we needed and then added more capacity, just in case demand increased, one unit goes down or prolonged drought that we had when we installed them and did not have any rain to harvest for several months. This time of year with rain, they are mostly not used.
The RO and filtered rain water go into a cistern that pumps it through another filter and UV system for whole house purified water. We drink from any/all indoor faucets. Never have had a problem in over 20 years with the whole house purification systems.
