    She says it is the way Dominicans cut/grate the cheese....not necessarily parmesan. Like grating carrots for example, they do with DR cheese.

    Its grated cheese. Can be any type of cheese. You would have to specify.

    Parmesan??
    Maybe the Kraft cheese, which still tastes different to the Parmesan we buy here. Anyways, pica pica has nothing to do with Parmesan. It is just what it says, queso rallado. Grated cheese.
