The jars I buy usually have a production date as well as a sell by date. Shelf stable for two years, but taste changes as it gets older.

Also, Cape Verdeans make it as a cold or room temp dish with bits of baccalao, boiled potato, raw onion, chic pea, boiled egg and a ton of olive oil.

My opinion is that chick peas are best used as hummus.

Preferably a spicy hummus including garlic. Not spicy by adding hot sauce or Sriracha. I prefer hot diced peppers.
