Queso de Hoja

Do any of you know how to make "queso de hoja?" It's a white cheese that is usually sold on the road form Santiago to Puerto Plata. I don't know if its a purely Dominican recepy. It's white, round, kind of stringy when pulled apart. They don't sell them in stores just on the road side from what I've seen. Thanks!!

It is sold in the supermarket in Sosua. It looks like a round, white ball.

I was told in a cheese factory that Queso de Hoja is normally made after the normal cheese is taken out of the moulds. They trim the excess off of the balls of cheese to make them the round size before they start the wax dip. They put the excess cheese together by hand. This is the case for the Guoda type cheese.

I do not know if they do anything different to the excess cheese to make the white cheese that you refered to.

The white cheese is great.
