I love globalisation and the tolerance we need to live in a globalised world... there is a regional version of cebiche in several iberoamerican countries... BUT... peruvian cebiche... no doubt... is best for me!
You can find peruvian cebiche in Santo Domingo at the Restaurant Aqua, made by a peruvian chef, of course... it is kind of expensive, but it worths!
It seems to be a favourite all along the Pacific coast of the Americas. I have eaten delicious ceviche in Guatemala and El Salvador as well as in Peru and Ecuador. Hey, that rhymes! :laugh:
