my friend and I (both english) have just spent the weekend recovering from the tench of our dominican husbands cooking mondongo! The sheet of tripe looked and smelt like a dirty nappy and smelt even worse after it was soaked, boiled and then made into their favourite modongo recipe. Is this normal and if we buy tripe that has been boiled and bleached beforehand will it smell just as horrible? Come on, tell it how it is and what's so special about this food...
