Playa Dorada is one long beach, and as Rocky said, walking a little further from where the hotels are will be a little quieter, but also less services of course.
Walking to the left will take you to the public beach area and on to Costa Dorada ( towards Puerto Plata ), and walking to the right will take you towards the fisherman village Bergantine ( direction Sosua ).
