Does someone have already try the sushi bar, which is at the entrance of Cabarete (on the left) when you are coming from Sosua.

I'm a huge fan of Sushi but you have to trust the place where you're eating it...

The original chef left a short while ago. No idea what the food is like now. I am told that they will be re-installed in a new venue where 'Toma la Luna' used to be (just before Valero) in the new year.
If you are ever in Santiago, try the new Shushi place behind the Hodelpha hotel / casino. Very good. Happy hour early evening with a 2 for 1.

The chef wasnt fired, the chef left.
According to the owner everybod gets fired. For those of us who know the owner know that she is impossible to work with. Every body leaves, its just a matter of time.

For as far as I know is this a new owner, not the same as that is running the one at Kitebeach. It will be a Japanish restaurant, more then just sushi.

Not sure about the 'ownership' structure, but the chef (Japanese) and his trainee-chef (Canadian) will be there and you're right, it's supposed to a full Japanese restaurant. Looking forward to seeing more restaurant variety!

The place is actually pretty good

The name of the sushi bar is Wabi Sabi. I know the owner (Lydia). Yes - she is very difficult to work with: but, she is also a fanatic about the quality of her food. I've personally seen her give an assistant chef hell for not preparing a plate properly.

I think that the owner's "difficult" personality is what causes the restaurant to be so good... she won't compromise.

Anyway - I've eaten there many many times and I like it. Try the Carpacchio of Tuna - if you are a sushi lover, it's something different.

That by itself is already out of line. If I see a owner of a place go bananas in front of me as a guest I am finished with the place.

By the way, we are not talking about a "difficult" person here but "absolute moron" would be better to use. ;)
