Do you take them down with you? Do you give them to people you already know or do you take them to somewhere like an orphange? What's the best way to do something like this?

Also if you go to the airport and your baggage is overweight....explain to them that you are travelling to DR and as part of your trip you are taking time out for humanitarian work.....they most often let your bags through without further charges.
