First trip to DR in February. Staying at Punta Cana Princess. Should we exchange US$ for local currency or is the US$ widely accepted?

If you use US$, you have no control over the rate of exchange. For tours, the prices are in dollars so no problem there, but for going to local bars and restaurants, shopping, etc., you are better off going to a good banco cambio and changing some of your money into pesos. Generally better off not changing the money at the hotel reception desk because they are notorious for giving a poor rate.

agree to Ken on that.
an example here:
at our beloved corner bar we pay 60 pesos for a cold pequnita, if you pay in US$ it is $2.-, which would be a 66 pesos, a 10% difference.
but it depends on how much you plan to spend on locations where to pay in pesos, if you just wanna do a afternoon walk throu a dominican shopping place where you may spend a 50 - 100 dollars a couple you shouldn't worry about changing money, see the extra charged 10 bucks as a tip and have fun.

To simplify the problem, getting to an ATM and withdrawing from there will likely give you a way better rate that changing at your hotel.
There may even be an ATM right there at PUJ airport when you arrive.
Keep some US cash for tours and the like, and use pesos for everything else.

There is Banco de Progreso ATM just outside the arrival area, in the outside walkway. just ask for "cajero"

and you find ATM's at all resorts, sometimes located at the shopping area, sometimes aside a bank-office within the resort, sometimes outside right at the main entrance of the resort, just ask your guest service or front desk staff, they know that.
