when i was in PC in july, my girlfriends and i did the full day safari adventure and the sunset catamaran sail which came with an hour or so of snorkeling and a lobster dinner on jellyfish beach. both excursions were worthwhile and fun so i would highly recommend them. the safari adventure does a few stops, one of them is to a local school so if you choose this excursion, try to bring some basic school supplies (ie: pens, pencils, erasers etc..) with you to leave with the students. they really appreciate it.
ive also heard really good things about the ATV tour but havent had a chance to do it yet. good luck and happy travelling!
