Quiet New Years and what not to miss

Hi-
We are going to DR for two weeks flying in and out of Santo Domingo. We plan to spend the first couple of nights in Santo Domingo and then we are looking for a quieter place to stay for News Years. We are two adults and a child age ten. We do not do all inclusive resorts but prefer small hotels or apartments. We also prefer to take public transport.
So any suggestions for New Years for a place to stay away from the city? Any suggestion for what not to miss in two weeks?
