Update: I combined a recipe that I found googling Passion Fruit Salsa with some tips from my maid/cook, and here is what I came up with:
4 chinolas
1 clove garlic, crushed
1/2 onion, finily minched
a small bit of cilantro and cilantro ancho, chopped
sazon completo
kosher salt
olive oil
barcelo fruit vinegar, about 1/4 cup
sugar
directions: scoop out pulp from 4 chinolas and microwave in a bowl for 30 seconds. push through a fine mesh sieve and set aside
sautee in oil garlic, cilantros, and onion till soft, add chinola, salt, sazon, sugar, and vinegar, boil, reduce heat, repeat this 2 more times. simmer till pretty thick. cook chicken, chulta, or whatever meat/fish you like (seasoned to taste). add chinola sauce when almost done cooking meat, sautee a bit more, till meat/fish is enveloped in sauce and serve with white rice, steamed veggies on the side. yum!
