It was brilliantly simple. I think it was from Silvia De Pou's Mujer 2000. The trick is in getting the caramelization just right.

I have all her books! But I never made her flan. Thanks PG, I will be making it, I love the texture look.

She thinks the "flanny" texture is gross. It's really like a cheesecake sans graham cracker crust and with the bittersweet syrupy goodness of a traditional flan.

My ex made the most amazing flan de queso. She's famous for it.

It's the only way I eat flan. As noted, the cheese gives it texture. Absolutely delicioso.

So.. we tried it using a pumpkin cheesecake recipe.. there were mixed feelings on the taste honestly.. some people loved it, and it wasn't the taste of others. Luckily, Anyelina made 2 different cheesecakes, the auyama one and an oreo one, and everyone loved the oreo one. Next week they are doing a savory dish which is more my style, and I hope to see some more creative dishes. They are only 8 people in the group at the moment but hopefully they will get some more adventurous women to join.
