Best Grilled Lobster Fried Rice In the DR

Not meat grease. It's made from pan-drippings when meat is baked or roasted and you skim the grease off before making the gravy.

So you'd start with a couple tablespoons of melted butter, then add in some flour and cook it until it thickens. This is a roux. A roux is often cooked on low heat until it turns color to add more flavor to the gravy. A roux can be almost white to a brick color. Skimmed pan drippings are added to the roux and it's heated until the roux dissolves and the gravy thickens.

You can also thicken gravies/soups by making what is called a slurry. You heat your pan drippings to almost a boil and then add in some starch(fecula in Spanish) which has been mixed with some cold water. This is added to the drippings to make a quick gravy. This is much easier, but it is not as good as when a roux is used.

Getting back to the OP, here is a nice dessert:

4-10 flour tortillas 6"-8"
Frying oil

Cinnamon Sugar
Vanilla Ice cream
Honey

Fill a pot no more than half full with oil to a depth of at least 3"
Deep fry the tortilla one at a time by pushing them into the oil with a ladle. The ladle will create a bowl out of the tortilla. When the tortilla becomes firm, use the ladle to flip tortilla bowl. Fry until crisp but not browned(about one or two minutes)

Shake the tortillas as you cook them in a paper bag with some cinnamon sugar.

Use the tortillas as bowls for vanilla ice cream. Top with some honey and serve.

@ JR and R/B... come on you guys, you can't tell me that even if you yourself don't eat it, you haven't had a big ol' turkey dinner once or twice a year with GRAVY. Or a home pot roast, etc. Gravy is gravy where I come from and if you think of fries, I can't think of any gravy that would go on them other than a nice brown sauce over the top.

Hahaha.....all the time Fiesta Mama....I just couldn't picture THAT TYPE of gravy poured over fries...I thought it was some other type of foreign substance..(no pun intended).....but hey....whatever floats your.........I'm sure I would try it, if it was put in front of me.

as a proud citizen of Belgium (euh... that is a lie, but ok), the country where "french" fries originated from, I can tell you I love my fries, but would never eat that Canadian dish, or some of those American fries dishes they concoct ("Man versus Food, etc...)

2 reasons... I love my fries and don't want them "abused" lol ... and it, sorry guys, looks disgusting...

The gravy you were talking about, and where some people gave the right recipe for it, is called a Bechamel sauce, and we use it together with certain vegetables like cauliflower, brocoli, etc... or as the base of the cheese sauce to go with macaroni, ham and cheese

AE, you are right... not for me either... I am not a health freak, I like my fries once in a while, I like my bechamel sauce, I like the cheese part, but all together... aaarghhhh.... (besides, I would lie belching and f...g in my bed all night as well lol) that looks like a sure recipe for heart-attacks, ulcers, etc...

But, maybe Canadians have stronger stomachs and hearts, the lucky bastards, so guys go for it, and enjoy... and if this food-stand ever appears, and you serve kid portions... I will give it a try, just because I believe you have to try it at least once...:bunny:

Ok here ya go.

The lobster i was using was imported and is much better than the frozen local lobster as they don't freeze them properly here in the DR.

They take a whole lobster and just freeze the whole thing without removing the tail but more importanly by not de veining it.

I have some Nova Scotia lobster ( claws and tails ) frozen in a can but I won't be using that for fried rice

All days, except on sundays, you can buy freshly caught lobster on the highway from SD to the airport. They are still alive and kicking (well.... clawing :bunny:), and are fantastic on the bbq with some herb butter

just cut them in half, devein them, and grill them for a couple of minutes... with the butter on top

And the great thing is, they are damn cheap as well if you know how to haggle...;)
