garlic and onion are vegetables, not herbs :) and i use plenty of both, along with fresh tomatoes and fresh peppers. i use one type of chili because i am not a fan of the food that is overly spicy. i will also throw in some black pepper. if need be some tobasco can be poured on the top.

you are right; then again, it is still early, and my brain is not fully awake.

i add a pinch of curry to my chili; makes for a lovely twist.

if you use , say, a tablespoon of chili, you can use a teaspoon of 3 different types, and still have the same amount. a blend of ground beef and ground pork works wonders, too.

there we part company. gotta have a little garlic and onion, and i use 3 different types of chili powder. cumin, of course, is a must, or it ain't chili.

In my chili con carne I add chipotle(powder) along with of course the chili powder. It's very good.

No peppers of any kind? No heat??

Oh right, Half a 16oz jar of Jalapenos or 7-8 fresh buzzed with the garlic. I thought I was forgetting something..

It's important to use red onions. Raw yellow onions are too pungent.

A pico de gallo isn't suppose to be that hot or you lose the cilantro and the tomatoes.

For heat I make a hot sauce with a 32oz bottle of Tapitio buzzed with a can of Chipotles and serve it in a squeeze bottle.

Well I love love LOVE coriander (and thank u for the English lesson, I didnt know coriander was the UK version and cilantro from the USA).

I dont think I have ever seen cilantro ancho here (Europe), but I do remember seeing it there. Dont really remember what it tastes like though. Which one is used in the habichuelas?
