I've had a similar observation. 90% of the churasco I've ordered in a restaurant was skirt steak with a sauce on the side. The other was either marinated round or sirloin.

All the churassco I've seen in markets has been skirt steak.

Any Churrasco Ive bought or ordered in the DR was skirt steak, except at Ali's...

In some DR restaurants the churrasco is not skirt steak. In argentina the skirt steak is called entra?a. Champions in Jaragua for instance used to have churrasco that was not skirt steak. Skirt steak needs some fat to be flavorful. I order from chef pepper and also order their fajitas which is also skirt steak.. . . . .yummy
