cassava having a low glycemic index (GI) is good for diabetics. Cassava can be fried as a side dish, cooked with ribs or made into flour and baked in bread and cake. Cassava cake being one of the famous desserts is consumed in huge numbers.
Nowadays it’s easier to find bags of frozen cassava at Latin markets, where it comes peeled and ready to cook.

And by the way, most of us living here buy it fresh or some have it in their Garden..

The truth is that the dominican kitchen is kind of poor, in the sense of variety, is not bad, but is not as rich as others, maybe because is a small country so they have their limits, I don't know...

There are loads of ingredients here that in other tropical countries (Thailand, India, Indonesia) are used but Dominicans don't ...must be the genes.

Could that be due to the influence of the Indians? I mean Surinam has only about half a million people but a huge variety of foods. That's because the country has Chinese, Indians, Javanese, Dutch and creoles.
By Indian I mean people from India.

I dont know. I think the personalities of the islands are different. I think the difference in food quality is that Jamaicans prefer to excel in what they attempt while Dominicans cut corners and refuse to make an attempt at progressing their forte.

That I know of, Jamaican has the chicken whatever, don't know any other great plate on their menu. Do not know anything about Trinidad culinary specialties and for Gods sake, Puerto Rico and DR has the same food and menu!

Jamaica got.some.awesome.stews. Especially when they start dashing that pepper sauce about.

PR has some minute differences, just like Cuba does. Im not a fan of these bland pink beans.

When I eat, I like a party in my mouth. Thats why I love Jamaican food. And I turn people onto that hOt sauce when I come back to DR.

Does anyone know of any good seafood restaurants that locals frequent in the Punta Cana area?
I'm not the typical tourist. We don't do resort hotels or go on guided tours. My wife and I both speak Spanish.
I am hoping to find one that has Sailfish, Wahoo, Dorado and Mero on the menu. I lived in Puerto Rico for 8.5 years. I found a great local restaurant in the Dorado area that sometimes had Sailfish in the summer months.

Non-touristy fish places - try the far end of Playa Macao. If you really want to venture far beyond the tourist areas, try Boca de Yuma - a fishing village very popular with the locals, or even Miches and Sabana de la Mar.

I guess you never taste a well done Dominican chivo guisado (goat stew) with moro de gandules (Moorish pigeon peas) it is a little spicy. It has to be clean real good in order to taste the ultimate flavor. If you don't have anybody to make it for you, I suggest you go to la linea passing cruce de esperanza in Valverde de Mao. It is the capital of goat in DR so any way you go there they will sell you goat, cook or raw.

One of the best chivo guisado meals I've had was not far past there in Moncion. It's one of our favorite dishes.
