Thank you, I am going to take @josh2203's suggestion of Torre Alta, promise the girlfriend not to damage the car and do the practice in Torre Alta.
Then drive to Jumbo the next day and then to Malecon via the roundabout so slowly add more complexity (and danger levels) and then do a trip to Santiago for highway driving and more city traffic. The parking I can do quite well (UK city parking can be quite challenging, especially central London) so going to ditch the instructors idea. Will try to get the highway code equivalent booklet here and give it a read.

If you can negotiate that Jumbo roundabout, you should have no problem elsewhere! Just remember that UK roundabout rules do NOT apply here! When I did my test they gave me the equivalent of the UK "Highway Code" when I applied for the licence.

Agreed on the roundabout. The problem is, even though it appears so, at least from European view point, that is no roundabout. Where it intersects with the three roads, there should be 2 lanes available to be within the roundabout for it to be a roundabout, but this is not the case. So those are just 3 idiotic intersections, one of which thankfully has traffic lights. You would just have to go with the flow.

So I definitely agree, if you can avoid it, do not use that area to learn or practice.

To answer your question...In Puerto Plata, go to the baseball stadium at the traffic circle. On the road that circles the stadium within the parking area, are 3 or 4 driving schools, ready to give lessons, each morning.
Same here in Santiago.
There is a driving school located in the stadium parking lot.

@drstock Thank you, anytime I am here, I am reminded constantly that the rules here are more like a guidance, up to the discretion of the drivers and the mood they are in.
