duck recipes needed

Grilled duck breast is my favorite meat, but sounds like Dominican ducks lack the body fat. I used to score the breast, cook to med rare, then finish in the oven with cooked bacon on top. As for it being tough, I suspect it may be being overcooked. I see many Muscovy type ducks in the DR. Very large variety. The wild ones aren't much bigger than pigeons.

the duck was great and so was the rest of the food. all worked really well and was worth two days of work :)
