I bought some in Jumbo a few months ago. They were in the racks next to the cash registers. Itty, bitty, bitty bag.

Of course nitrogen is air.

You were right the first time. Commercial potatoes chip maker use nitrogen gas to displace air in the bags prior to sealing them. Air is a mixture of various gases with nitrogen ~78% and oxygen ~21% by volume being the major component. The remaining 1% is a combination of other gases. Maybe the coffee was cold or spoiled?
It's never a good sign when one starts the day by second guessing ones self.
