Not 'el thicko' at all.... we can cut into legs, shoulders, neck, ribs (not that meaty but tasty) but we are not professional butchers! Liver, kidneys, heart etc supplied FOC.
We look forward to our next party and having some of BigPalmFinca's piggies!
Also, the tierra negra is of excellent quality and am waiting for the ground to dry out so we can order a couple of truck loads.

Tuly is FAMOUS! Every time we go up to see WB or Mr. C; Tuly is around working with a smile. He has "done in" a few pigs for us and loaded/unloaded a few truck loads of the composted cow manure.... "Black Gold" for us. On this pork, we let him keep the head and feet and in return we recieved a dozen fresh eggs from him.
Once this 89 lbs. was loaded into the Jeep, we dropped it off at the butcher on La Mulatta road (that has been worked on and is much better at this time) for them to cut to our specs. Picked up the next day and into our freezer.
Looking at our next order.
