The "Calif. based" is of no help/use.
Salaried work (in hospitality) is hardly available. You'd compete with Dominicans at very low wages.
{You would not be able to feed your 3 dogs on such 'income'. BTW, your '3 mastiff type dogs' won't be very welcomed here...}
Stefan took over a small hotel in Las Terrenas and - so I heard - made a nice job of it.
There is no problem of available hotels here (and that should tell you something...).
Your problem then is to fill it... there are not many individual travellers any more (there used to be 15 years ago).
So, I think a 'Se vende' sign should be included in your renovation work...

NE tourism concentrates on
Las Terrenas,
Las Galeras and to a lesser degree
Santa B?rbara de Saman?.
When it comes to infrastructure (electricity, shopping) LT is best.
You Spanish will undoubtedly help.
