Hi, I would like to make Salami and Langonisa myself. Does anyone know how or have a recipe for me to follow?

In the intro to the recipe Aunt Clara says that she had to try several times to get the texture right, so you may need to vary the proportions.

That's what I meant. If you use pork you may have to vary the proportions to get the right taste/texture balance. The recipe posted was an attempt to create a healthier version with a comparable taste to the conventional Dominican salami.
