So fun project. Want to build a wood fire pizza oven. Does anyone have any experience to share? There's tons of videos online. Ideally want to find someone in the Cabarete/Sosua area who's done it before. Any ideas where to get fire bricks? I have some reclaimed clay bricks that I could use, but I'm reading that fire bricks are the best.

Thanks in advance!

I can tell you when I worked in PR some new hires from the states raved about the pizza and pinchos served near a local beach resort.
I had never been there so I agreed to go.
The pizza would take a while and they were hungry so they lined up for the pinchos for an appetizer and I had to point out to them the wood they were using to bar-b-que the pinchos was pressure treated.
So make sure what wood they are using because in DR I guarantee it is not mesquite, ash, cherry or hickory - it is most likely construction lumber

OMG! I know this is serious but I couldn’t help laughing. I bet the carcinogens in the smoke from the pressure treated wood fire enhanced the flavour. People use pressure treated wood for picnic tables without thinking about the health implications.

Btw, The CDC will be requiring cancer warning labels on alcohol products sold in the US. Stocks in companies that produce these products dropped sharply a week ago.

There are several shops that do customized wood fired pizza ovens on the Highway from Santiago to SD. I do recommend to have a look there first and check them out and take as many pics as possible and ask a hundred questions. For example i know that they fill the bottoms with huge amounts of broken glass before they make the floor. These guys don't mind giving you tips. The slightest detail can make the difference between a great and totally useless pizza oven. This number is more than 5 years old so no guarantee that is still the same guy ; Pizza Horno Bolivar (809) 979-1993 Have Fun !!!

Thanks for the heads up. I have a smoker that I've been using for the last few years, so I'm figured out the wood.

I will give Bolivar a call. Thanks Manuel

Chico. My post #3 has an error in it. It is the US Surgeon General who issued the new cancer warning label requirement for alcohol products not the CDC. Canada is following suite. It will be interesting to see if the alcohol products on the DR shelves carry the same labels.
