I will be staying in Punta Cana and would like to do some rafting or tubing, some hiking. Would like names and numbers of who to contact.

You are about six hours away from rafting, which takes place in the Jarabacoa mountains. Rancho Baiguate is the place for that. That is also the place for the most adventurous hiking, up the Pico Duarte Mountain, highest in the Caribbean, about 3,500 meters up. You would have to take off two days from your vacation in Punta Cana to carry that out. I would suggest you do an overnight in Santo Domingo (stay at a hotel in the colonial city), to proceed next day to Rancho Baiguate. Their website is http://www.ranchobaiguate.com.do

You can do tubing in the Fun Fun Cave in Hato Mayor. Your hotel may have that excursion available. It's a seven kilometer long cave, and you can cover about half with a tube.

While in Jarabacoa, if time allows on the highway after the Virgin sanctuary on the S-Curve go up another mile and your left stop by Alpes Dominicanos and ask for Ingeniero Rodriguez, the Administrator and try one of the typical Dominican plates at the Restaurant by the swimming pool, take a dip in the water while they prepare it, and then have yourself Dominican Goat a la Criolla, or Rabbit. Try Rice and beans with tostones for your meat, look at the sites and nice villas at Alpes and then go on to rafting.

I would also recommend, if time permits to go to El Generalissimo or Camp David Ranch, only about 30 minutes away up in one to the most challenging inclined roads in the country, but very safe and beautiful indeed. The views from Camp David Ranch are fantastic. You can see the Momumento de Santiago as small as a your fingertip from 1200mts.
