Goya has just published these empanada recipes. I did try their newest dough for baking them instead of frying, and they were delicious. In DR I buy yuca/cassava dough from ladies outside the Mercado in San Cristobal, and may try some of these different fillings for a change

Yuca is my favorite - it brings a dimension of sweetness and chewiness to the experience

Mine too. Several places alone the beach in Palenque sell them, they call them cativia / catibia. My favorite are lambi or shrimp filled.
