Had these for breakfast and in soups. Kind of like butternut, but denser. They grow wild in vacant lots...

Ah right, thanks. Is there a name for the breakfast with it and potatoes and a hard boiled egg?

Here's a produce stand at the open air market..

I didn't mind it once a week or so, but it was pretty bland simply boiled.

Calabaza is the standard Spanish word for pumpkin, the word is still used in Cuba.

I also had yautia several times, I think for 30 peso a pound from a truck. Seemed kinda pricey for a root veggie. The only thing good I can say about it is it isn't as bad as yucca...

rabano ( Dominican radish) tastes pretty good. Yucca cooked correctly and eaten with avocados is delicious.

How is yucca cooked correctly so it is delicious? Yucca and all recipes with green plantains are on my non-food items list.

Auyama has its place.

I'm sure Chiri will chime in here, but yuca is one of my favorite foods. First of all, you need to be sure it's young and fresh. "Yuca de aqua tibia". :)

I *love* it in soups [chicken soup, sancocho, etc.]. If I just boil it, in salted water, while it's cooking I saute onions in a bit of good olive oil, and then after I put the yuca in a serving dish I pour the onions & olive oil over it. My all time favorite Dominican food are arepita de yuca, they are like catnip to me.

I love empanadas made with yuca instead of flour. I love bolitas de yuca with cheese inside.

I guess you get the idea - I love yuca.

I don't know how they cook it right, I just know when it tastes decent, when done with butter and red onions.

Yuck, I agree.

Now, if you mash them into mangu with olive oil or butter, salt, etc., and top with fried eggs and some sauteed onions........

Hate mangu as well. Does nothing for me at all.

Yuca that is just "perfect" and boiled is still a poor substitute for a potato to me. I pass on that every time.

Yes there are things yuca can be used to make, like arepitas, but it involves processing the yucca and adding flavors that actually taste good to it. Otherwise it might as well be chalk.

First, do not translate yuca as yucca (look it up). Yuca goes by names such as cassava or manioc in English.

When yuca is right it is far more delicious than potato (which is quite bland). However, it is often not right. When it has a pale whitish color after being cooked (as opposed to an intense, deep white) is not good. Hard to describe in words but those who know yuca know the difference. Ideally you should eat yuca immediately after harvesting it (say from your own backyard), from the ground to your kitchen. Then it is delicious.

Hard to say anything bad (flavor-wise) of RIPE plantains in any of its preparation forms, especially:

Here is a recipe (ES).

P.S. Why on earth won't these JPG images show????
