Part of the nation’s Spanish heritage but with some variations, cooking with codfish has been an element of the Dominican culinary tradition for centuries. Famous Norwegian chef and food writer and TV show star Arne Brimi was in Santo Domingo this week to take part in this year’s Codfish Festival organized by importers of the fish.
During his visit here, Brimi reportedly said that Dominican codfish recipes are even more creative than those in Norway, the leading producer of codfish in the world.
As reported in Hoy, Brimi will air an hour-long TV show on how codfish is prepared here. “We had to come here because this is one of the leading markets for Norwegian codfish. Now we return to Norway to show how you prepare the fish that is so important to you. The people in Norway have no idea of this nor of how in the DR the cod is transformed in delicious dishes,” he said.
He said he was impressed by the variety of ingredients that are used here and that blend well with codfish, spices as well as vegetables. He said that a wider variety of dishes are prepared here.
“You have very good rum that can be used to marinate the fish. Dominican rum is delicious,” he said.
During his visit he participated as chef during the Norwegian Codfish Gastronomic Festival.
