Carlos Sebastiani Baca is new chef at JW Marriott

Peruvian chef Carlos Sebastiani is the new executive chef at the JW Marriott at the Blue Mall. Upon arriving, he has focused on making changes in the menu of the hotel’s main restaurant. “We are working on a new concept for the restaurant based on the local experience. He said he is working with local arts and crafts people and investigating Dominican biodiversity. His research is also taking him to work with local fishers and farmers.

He said the plan is to position the hotel as the best destination for weddings and banquets in the city of Santo Domingo.

The hotel is working on a contemporary menu. “Let us not forget that the JW Marriott Santo Domingo is the only luxury hotel in the city, and luxury means being at the forefront,” he explained to the press.

He said he is pleasantly surprised by the diversity in Dominican cooking, the variety of vegetables and fruits.
