Tips to make a good mangú

Now that Jumbo mega store has launched a campaign to get the word “mangú” into the RAE Spanish language dictionary, people are rethinking the popular dish. Listin Diario interviewed Chef Carolina Arias who shares her tips for making superb mashed plantains. The dish is usually served topped with sauteed onions and accompanied by fried sunny up eggs, fried white cheese or fried salami or sausage.

Chef Arias’ tips for mangú are:
“Scare” the plantains. That is, when the the plantains are almost soft, add a glass of cold water to the pot of boiling water. She says this guarantees they soften even more.
Use some of the boiling water to mash the plantains.
Add a touch of milk and butter for a sweet taste.
Add one sweet plantain to the green plantains.
To keep the plantains soft before serving, add a touch of cold water on top of the plantains. She says many will add a little olive oil on top.
