Cayena by Maria Marte in Jarabacoa

The Dominican Republic’s two Michelen star-winning chef Maria Marte has her own restaurant in her hometown, Jarabacoa. Jarabacoa is a mountain town popular with domestic tourists, mountain climbers (it is base town for climbs to the Pico Duarte, highest in the Caribbean), and a large retirement community.

After migrating to Spain, Marte worked as a cleaning lady until chef Diego Guerrero at Club Allard in Madrid gave her a chance to cook at the restaurant. The rest is history. She won her stars in 2007 and 2011.

The chef who wrote her name in the international gourmet books for her work at Club Allard in Madrid, Spain has been back in Jarabacoa for some time now.

In a recent interview with Diario Libre, Maria Marte described her style has always been Mediterranean with a touch of Dominican Republic and Spain. For instance, in the masterclass of the recent Paradisus gourmet extravaganza (The Epicure by Paradisus), she prepared “Lobster with mango guacamole.”

Those who follow Maria Marte would do well to check out her cooking at the Cayena by Maria Marte restaurant at the Jarabacoa Country Club, a residential and touristic development. The menu is a Spanish and Dominican fusion.

Diario Libre reports that Maria Marte is advancing towards the opening of her cooking school. Meanwhile, she is also teaching at the Escuela de Cocina Pucheu in Santiago. Cooking fans can participate in the upcoming international cooking courses she leads at the Escuela de Cocina Pucheu.
