If u live in the campo, and it is modongo de pollo u are after ( I use it for my dogs ), it is very cheap but not washed. Pay someone 100 pesos to do it for u, if u dont like doing in it.
If it is mondongo for human consumption, like pork or cow, la sirena, la national sells them already washed ( but I would wash them again to be on the safe side ). In santiago, for sure, cos we buy them from time to time.
When u buy a chicken in the campo they clean it out for u, but then put back in the heart, the liver and the geysier. All 3 are great in a salad.
