The fact that those 'salamis' hang from 'colmado' rafters for weeks without refrigeration and that only one of our 5 chihuahuas would eat it (the very same that also eats chicken droppings) tells me enough... :tired:

donP

It doesn't need to be refrigerated!
THAT should tell you SOMETHING!!!!!!!!!!!!!!1

"DONP" YOU BEAT ME BY 60 SECONDS

So as not have to choose over 60 seconds, I'll quote you both.

The Dominican salami sucks. All of it does, and I aint eating it. Now, I do love Italian dry salami, but do you all really think that the "White wrapping" is really white?? It hangs and cures in a cool, but non refrigerated area until it dries out. It is cured, so until opened, doesn't need refrigeration. The wrapper is white from MOLD.. Now you'll never look at Italian salami the same..

I have a close friend who works in a big name salami factory in Santiago and he tells me theres a 1:5 ratio of meat to "ice" used in the process. The meat absorbs alot of ice/water making it bulkyer when being wrapped for salami..what type of meat they use is anyones guess!
