Me too. Last year a Venezuelan couple opened a place on the beach near us, selling only empanadas, made from corn meal instead of flour. 25 pesos of scrumptious-ness. I wanted to learn how they made them, but sadly they closed up after a couple of months. Now I have the recipe!

Interesting to see that Goya now sells discos specifically for baking. I’ve tried baking their regular discos for family who don’t eat fried foods.....yuck.

The empanadas make with yuca instead of flour are still the best IMO
