Plastic bags - Some stupid tradition that started because the poor folk did not have pots with proper covers. Btw, dont stick your hand in the freezer after you just used the blow dryer.

We use a plastic bag AND a cover!! But the rice tastes real good, so go with the flow......

And u have to wash all meats with vinegar and/or lemon and/or bitter oranges...... before cooking....
Ok for chicken, I ll accept it to for pork, but I went bonkers when my sobrina washed my fillet of beef!!!!

i don't believe for a second. dominican dona has no concept of percentage.

Before the advent of plastic bags, brown paper bags were used to cover the rice; before the brown paper bags, platano or banana leaves were used. I'm sure that if you go not too deep into the campo, you'll see a huge pot of rice being cooked covered with such leaves.

This is an island ting, and not unique to the DR. Many times, when perusing caribean recipes, I'll see, "wash ____ thoroughly with lime/lemon. If I had to guess, I'd say that it might have stemmed from the days when refrigeration was non-existent, and meat left out became rancid. The lemon/lime rub would mask the odor somewhat.
