I know you can get Bisquick in the DR, but I think it is about twice the price as in the US. Also, it would not make a good pizza dough.. It does make an excellent dredge for chicken fingers when mixed equally with crushed corn flakes.

you could leave almost any dough in a fridge overnight, i think. but my fridge is always full to the brim. i use this pizza dough to make simple bread too. i just add some onion, garlic and grated cheddar.

a challenge for you, dv8; do you think you can fabricate this?

a buttery type of pizza crust that has a slightly flaky consistency, that can be used to make pizza empanadas..

Pizza Empanadas sounds like a great idea. Essentially mini Calzones. I worked at a calzone station once and they took seven minutes to make running them through a conveyor oven for 5 oz of dough and fillings. A commercial sheeter is nice to roll the dough out and a deli table for fillings.

Empanadas don't use the same dough as pie crust. They would fall apart in a fryer. I think it uses a little fat but not like pie crust.

I like foccaccia, but not the fine ones, the one where u put the pizza dough in the oven, wait a couple of minutes to it blows up ballon size. Cut the top third off, stuff with cheeese ( mozza or queso de oja ) back in the oven a couple of mn. Take out add parmesan flakes, roquette salad, a couple of slices of tomato and parma ham. Then squash the whole thing and cut into slices like a pizza........ yummy.

Oh and by the way, I freeze my dough. Since I do it by hand and get flour everywhere, easier to do big quantaties and clean up once.......

I think you might be referring to a Scacciata. I might try that sometime:

I think I'd skip the veggies and just do meat and cheese and some sauce.
