Here's whats left of this mornings New York Strip From Bravo. I wish I would have remember to take a picture of the fog-like marbling.

This was 3 minutes on each side. Cut with a knife, but cuts just as easy with a fork.

Jumbo and Nacional are the same company. All their Angus and USDA graded beef is from the US.........................
interesting. You and monkey man should get together at a seafood restaurant, don pepe and fabricate "more" stories about eating a steak dinner with motorcycle gang members. Photos please.

They’re having a beef so technically on-topic ;)

I like to slightly burn it on all sides at high heat to ‘seal’ the moisture inside, then at lower temps to the desired rosé inside. Crispy on the outside and suave on the inside. I usually prepare it with salt, pepper and olive oil a day before to marinade.

Are we still talking about steak?

We were at a steakhouse in Palm Beach for a birthday celebration about 10 years ago. I answered the waiter when he asked how I wanted my steak done. He responded with “Pittsburgh style?”, and I had no idea what that meant, never heard of it. He explained it meant almost burnt outside and very rare inside. It was probably the best steak I ever had.

So that’s Pittsburgh. What is Kansas City and Chicago style???

I’ve ordered from both, and honestly, it’s a tough call! Kansas City steaks are super tender and juicy, while Chicago steaks have that nice aged flavor. Doing a taste test sounds like a blast—just make sure to grill ‘em right! You’ll probably have a clear favorite after that.

Well now, I lived in Pittsburgh and ate at steak houses often. Never heard of that!
