I've never done that, I think you lose a lot of the flavor in the water. But then, I usually cook them in tomato sauce and then make spaghetti with the sauce. I stab each crab through the underside to kill them, then clean the crab by removing the outer shell, removing the inedible stuff, washing the center, then break each crab in half before adding to the sauce.

What do they call the big round crabs with a body about the same size and shape as a softball? Maybe 12" across with their legs spread out.

Why can you not buy groundnut/peanut oil here in the DR, they grow the said nuts here don't they? Chips/french fries just aren't the same cooked in any other oil, mind you cooked in duck dripping they are delicious.

I had a heated discussion with my family in law yesterday while I said the Dominican kitchen is one of the less varied kitchens there are. I was very wrong according to them. There is no better kitchen than the Dominican kitchen and there is not one country with more variety in their food than the Dominican Republic.

Maybe once avoid using oregano so not everything tastes the same then!

Why can you not buy groundnut/peanut oil here in the DR, they grow the said nuts here don't they? Chips/french fries just aren't the same cooked in any other oil, mind you cooked in duck dripping they are delicious.

My Dominican mother-in-law always preferred peanut oil for frying tostones, they sell it most places, at least in SD.

Haha. Our DR maid did most of the cooking, and you're right - everything tasted the same whether it was chicken, beef or pork. Several times I just took over the kitchen and made something different, something Italian or something American, just because I couldn't stand it anymore. She was amazed watching me make lasagna with the right ingredients, she never saw ricotta cheese before. When we ate later, she liked it, and said that it was good because I had the right "chemicals" [ingredients].

Habichuelas con Dulce, Dominican Sweet Beans

Ingredients:
2 ? cups (1 pound) red or pinto beans, cooked in 3 liters of water.
2 cinnamon sticks
? teaspoon of ground cloves
? teaspoon of ground cinnamon
1 teaspoon freshly ground nutmeg
2 ounces of fresh ginger mashed or ? teaspoon of ground ginger (powder)

5 cups of whole milk
1 can (13.5 oz) = 2 cups of coconut milk or milk of one coconut processed with ? cup of hot water.
1 teaspoon of salt
3 cups sugar or to taste
2 Tablespoons margarine or butter
2 pounds of boniato (batata) peeled, cut in squares and boiled
1 cup of raisins
Sweet crackers, galletas de leche de Guarina (as much as you like).


Instructions:
1. Clean and rinse the beans, and cook them 3 liters of water, beans should be completely covered. Cook until they are tender.
2. Blend cooked beans with all its water. Strain beans, add a little of milk if necessary to strain more easily.
3. Add the milk, and coconut milk; mix well. Add the sugar, salt and all the spices except the nutmeg.
4. Cook over high heat until it boils, stirring with wooden spoon constantly for about 15-20 minutes (in large pot less time is needed), lower the heat, add the sweet potatoes (batatas) that have been already cooked separately and cut into squares, add raisins and cook for another 10 minutes or until it thickens slightly.
5. Just before you remove from the fire add the butter and 1 teaspoon ground nutmeg, cook for another 5 minutes.
6. After 15 minutes of removing from fire, add the sweet crackers. The amount is your choice. Store in the refrigerator when cooled. Serve hot or cold.

Yuck! Good for you.:) I would not be able to stab them through the underside. I just simply toss them in boiling water. Quick death.;)

Super Mercado National has "GALLONS" of "peanut oil"!!!
Here is a quick favorite,Typical Dominican "DISH"!
Take 2 cups of soybean oil, add 2 cups of sugar, add 2 cups of salt, mix well.
Fry in 2 cups of soybean oil.
To serve sprinkle with salt & sugar to taste!
My "MIL" makes it everyday!!!!
The whole family just loves it, they can't seem to ever get enough.
My wife makes it when my "MIL" is in the hospital.
She is over weight, has high blood pressure, diabetes, and "Stomach Problemos"!!!!

First time I are them, 28 years ago,a friend brought me a whole pot of them.
I like them.
After she left, I are the whole pot!
Several hours later they HIT ME!!!!!!
Gas, bloating, abdominal cramps, then explosive diaarhea!!!!!!
That was about it for me!
I do like "Helados Bon" Habichuleas con Dulce" ice cream", usually only available around "Semana Drunko"!

Great thread.

I'd like to know what is everyone's favorite dish?

Mine would probably have to be rice and beans and pollack or roasted eggplant, fried green plantains and a green salad. Not only delicious but healthy too.

I agree, eating healthy is always wise. I love roasted eggplant and the green salad too. :)

The Manicero oil they sell is not Mani/peanut, it is sunflower. Sadly this kind of deliberate mislabelling is allowed in th RD.
